More space! The Sun isn’t a wall which things hide behind. As the Earth rotates around the Sun, we see different parts then what we did before (because it was blocked out by the Sun previously). Over the course of one Earth rotation around the Sun (one year) all parts of the sky are visible. Therefore we know that space and the Universe looks mostly the same in all directions.
